|TIPS FOR A TASTY CHILI
Choose a boneless, top or bottom round roast if you plan to cut the meat into cubes. Trim off all fat and discard.
Pat roast dry before cubing it. Brown small amounts of meat at a time to ensure that the surface is seared and the meat juices sealed in. Don't steam the beef cubes.
If you use ground beef, choose ground round or as lean a ground beef as you can afford.
Cook cubed beef chili at low temperature for 1 to 2 hours or until beef is tender. Skim off any fat that rises to the surface as the chili simmers.
Refrigerate leftovers. If you plan to freeze leftover chili, don't add beans until you reheat. For optimum flavor, use the frozen chili within 2 months.
